Recipe: Stuffed eggplants

I often check the website from The Wok of Life as I find it so inspiring and accurate. I am not a big fan of chinese recipes posted by occidentals, they’re tweaked and don’t have that chinese taste! Plus quite often the list of ingredient is questionable. That’s why my reference when experimenting with a new dish is The Wok of Life!


Recently, we have decided to try a new chinese recipe per week, as well as a salad. This allows us to vary our meals and to work together as a couple It’s a nice activity and it changes from just eating together or watching a serie. So this week, we had eggplants and ground meat in the fridge so we decided to prepare stuffed eggplants.

What do you need to prepare this recipe? (Note that I don’t use precise quantities)


  • Shrimps – 1 portion depending on how much filling you want to make

  • Ground meat – 2x the shrimp portion

  • Eggplants – 1 or 2 (1 if you carve and stuff both sides OR 2 if you cut them and make mini burgers )

  • Egg

  • Garlic

  • Scallions

  • Ginger

  • Salt & Pepper

  • Cornstarch

  • Xiaoxing (cooking) wine

  • Sesame oil

Note: If you take 200gr of shrimps then you need to use 400gr of ground meat. That means that I usually take 1 tablespoon of each liquid elements and double the dose based on how much filling I plan to prepare. In this case I would probably stick to 2 tablespoons. If you like your food to have lots of flavours, keep adding but taste the filling to not overdo it. If you prepare this recipe more than once, you’ll do it with your eyes closed.


To prepare the filling, all you need to do is blend all the ingredients together until you have a paste with still some small shrimp pieces. At this point, feel free to season a bit more and make sure to mix well.


Once the filling is ready, wash your eggplant and cut it: In half and carve it OR cut the eggplant in 1 cm large slices. If you decided to carve simply place the filling in. If you decided to slice then start making mini burger.


Once this step is done, place the eggplants in the steamer for about 10 minutes.


While the eggplants cook, heat a pan with sesame oil and some garlic a few seconds. Add then the following ingredients :


  • Soy Sauce – 1 teaspoon

  • Oyster sauce – 1 tablespoon

  • Chicken stock – 1 cup

  • Sugar – a pinch

Let the sauce simmer a bit and mix two teaspoons of cornstarch in some water before adding this mixture to the pan. Keep stirring, we want the cornstarch to blend in and to thicken the sauce a bit.


Cook some rice and when all is ready –> time to enjoy a great dinner! Dress your plate, garnish it with some scallions and there you are!
