Recipe: Banana Bread Experiment

Last Wednesday I experimented a new recipe. I had plenty of ripe bananas but no motivation to just eat them. So I decided to turn these into something funkier aka Banana Bread! I wasn’t certain about the result but it turned out quite good I think.
This recipe also ended up being vegan which was nice for a change. Vegan do eat super tasty food don’t be fooled!
Ingredients
2 cups of whole wheat flour;
4 ripe bananas;
1/2 cup of cane sugar; (I am tempted to make another bread without sugar)
1/2 cup of coconut oil;
1 tsp of baking soda;
1 tsp of yeast;
1 tbsp of vanilla extract;
I added some dried cranberries in the filling and pumpkin seeds as a topping. Next time it might be rum and nuts? Who knows! But I am eager to make a second attempt.
Preheat your oven so it reaches 180°C.
First I mashed the bananas in a large bowl, then added the sugar and mixed well. I then blended in my coconut oil and finally added the wheat, baking soda and yeast. Make sure you get a nice texture, not too liquid and a bit sticky (otherwise add a bit more flour). Finally, add-in anything else you like : dried cranberries like I did or chocolate chips, nuts, and more!
Now it is time to fill your cake mold and throw it in the oven for 40 minutes at 180°C until golden brown Check if the bread is properly baked by sticking a pike or knife in, if it comes out clean then it’s perfect! Let it cool and then devour it.
I am so happy with this recipe that I may end up doing it again today! We have leftover banana in the office that nobody wants to eat haha :p More deliciousness for me!
